It all began in 2012 when we touched down in Tokyo in search of the perfect Japanese chef. There we discovered Chef Makoto, whose imperial style of freshly rolled, never-stored sushi was simply melt-in-the-mouth good and his wok dishes – to die for. With a little sweet talking, Chef Makoto agreed to join our band of super-passionate sushi lovers and the rest, as they say, is history.
